that equation the sheer amount of space dedicated to education purposes and you have a fully functional, modern, locally focused culinary center located in the heart of one of the state’s most prosperous communities.

The front end of Coltivare is a professional restaurant serving locally sourced food and beverages. The staff and kitchen is hired and managed by professional hired employees, although students have opportunities to intern and job shadow throughout their terms at the College. Coltivare's offerings take advantage of our region's status as one of the pioneers of the national local food movement - the menu features local growers, meat, and more. On the beverage side, Coltivare capitalizes on the Finger Lakes growing status as a world-class wine producing region, and also offers beers and other drinks from regional brewers and producers.

The majority of space at Coltivare (some of it hidden from view but much of it visible) is dedicated to the educational mission of the College. There is a teaching kitchen that mirrors the main kitchen; a teaching amphitheater specially designed for wine education, complete with troughs; and space for students to observe daily restaurant functions.

Similar to the farm, Coltivare is set up as an LLC and administered by the Foundation.
